- 4 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon salt
- 1 teaspoon sugar
- 8 cups beef broth
- 1 teaspoon fresh thyme
- 4 slices of baguette
- 1 cup grated Gruyère cheese
Instructions
- Melt the butter in your cooking vessel.
- Add the sliced onions, salt, and sugar.
- For slow cooking, set on low for 8 hours or high for 4 hours until caramelized.
- On the stovetop, sauté the onions on medium heat for about 30 minutes, adding salt and sugar halfway through.
- If using an Instant Pot, use the sauté function for caramelization, then seal and cook.
- Once caramelized, introduce the beef broth and thyme, and simmer.
- To serve, ladle the soup into bowls, place a slice of baguette on top, and add grated Gruyère cheese.
- Broil for a few minutes until golden and bubbly.
Notes
For variations, consider adding a touch of cognac or sherry, or experimenting with different cheeses.
