Description

A comforting blend of caramelized onions, beef broth, and melted Gruyère cheese, perfect for sharing on chilly evenings.

Ingredients

Scale
  • 4 large onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon salt
  • 1 teaspoon sugar
  • 8 cups beef broth
  • 1 teaspoon fresh thyme
  • 4 slices of baguette
  • 1 cup grated Gruyère cheese

Instructions

  1. Melt the butter in your cooking vessel.
  2. Add the sliced onions, salt, and sugar.
  3. For slow cooking, set on low for 8 hours or high for 4 hours until caramelized.
  4. On the stovetop, sauté the onions on medium heat for about 30 minutes, adding salt and sugar halfway through.
  5. If using an Instant Pot, use the sauté function for caramelization, then seal and cook.
  6. Once caramelized, introduce the beef broth and thyme, and simmer.
  7. To serve, ladle the soup into bowls, place a slice of baguette on top, and add grated Gruyère cheese.
  8. Broil for a few minutes until golden and bubbly.

Notes

For variations, consider adding a touch of cognac or sherry, or experimenting with different cheeses.
