Description

Fresh and crunchy spring rolls wrapped in rice paper, filled with vibrant vegetables and herbs.


Ingredients

  • 1 package rice paper spring roll wrappers
  • 1 (5 oz.) bag baby spring lettuces
  • 1 red bell pepper, cut into strips
  • 1 hothouse cucumber, sliced
  • 1 avocado, peeled and sliced
  • 1 cup shredded carrots
  • 1 cup thinly sliced purple cabbage
  • Fresh mint and basil (Thai basil recommended)
  • 1 recipe Simple Thai Peanut Sauce

Instructions

  1. Fill a bowl with warm water.
  2. Dip one rice paper wrapper in the water and let it soak for 5 to 10 seconds.
  3. Remove it carefully and lay it flat on your work surface.
  4. Place a handful of greens towards one end of the wrap, and layer on vegetables and herbs.
  5. Begin rolling by picking up the end of the rice paper closest to the filling.
  6. Wrap it tightly over the filling, folding in the sides like a burrito.
  7. Continue rolling until fully sealed.
  8. Store the wrapped rolls covered in the refrigerator until ready to serve.
  9. Slice in half on a bias before serving with the Simple Thai Peanut Sauce.

Notes

Keep a damp towel nearby to cover leftover rice paper wrappers. Use high-quality, fresh ingredients for the best results.
