Ingredients

  • 2 cups romaine lettuce
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 1/2 red onion
  • 1 cup Kalamata olives
  • 1 cup feta cheese
  • 1 pound cooked chicken breast
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Chop the romaine lettuce and place it in a large salad bowl.
  2. Halve the cherry tomatoes and add them to the bowl.
  3. Slice the cucumber and red onion and add them as well.
  4. Add the Kalamata olives and crumbled feta cheese.
  5. Slice the cooked chicken breast and place it on top of the salad.
  6. Whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl.
  7. Drizzle the dressing over the salad and toss everything together gently.
  8. Serve immediately and enjoy!
