- 1 fresh pineapple, peeled and cored
- 1 cup all-purpose flour
- 1/2 cup coconut flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup coconut milk
- 1/4 cup white rum (optional)
- 1 teaspoon vanilla extract
- 1 cup sweetened shredded coconut
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- Slice the peeled and cored pineapple into 1/2-inch thick rings. Pat dry with paper towels.
- In a large bowl, whisk together all-purpose flour, coconut flour, sugar, baking powder, and salt.
- In a separate bowl, combine coconut milk, rum (if using), and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, whisking until a smooth batter forms.
- Place shredded coconut in a shallow dish.
- Heat vegetable oil in a deep fryer or large, heavy-bottomed pan to 350°F (175°C).
- Dip each pineapple ring in the batter, letting excess drip off, then coat with shredded coconut.
- Carefully place coated rings in hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove with a slotted spoon and drain on paper towels.
- Dust with powdered sugar and serve warm.
Notes
- For a non-alcoholic version, replace the rum with pineapple juice.
- These are best served immediately while still warm and crispy.
- Try serving with a scoop of vanilla ice cream or coconut sorbet for an extra decadent dessert.
- Be careful when frying to maintain the oil temperature around 350°F for best results.
