  • 1 cup coconut milk
  • 1/4 cup white rum (optional)
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. Slice the peeled and cored pineapple into 1/2-inch thick rings. Pat dry with paper towels.
  2. In a large bowl, whisk together all-purpose flour, coconut flour, sugar, baking powder, and salt.
  3. In a separate bowl, combine coconut milk, rum (if using), and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, whisking until a smooth batter forms.
  5. Place shredded coconut in a shallow dish.
  6. Heat vegetable oil in a deep fryer or large, heavy-bottomed pan to 350°F (175°C).
  7. Dip each pineapple ring in the batter, letting excess drip off, then coat with shredded coconut.
  8. Carefully place coated rings in hot oil and fry until golden brown, about 2-3 minutes per side.
  9. Remove with a slotted spoon and drain on paper towels.
  10. Dust with powdered sugar and serve warm.

  • For a non-alcoholic version, replace the rum with pineapple juice.
