Ingredients

  • 1 1/2 lbs Yukon Gold potatoes, diced
  • 14 oz smoked Polish sausage, sliced
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tsp paprika
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  1. Wash, peel, and dice the Yukon Gold potatoes into uniform pieces.
  2. Slice the smoked Polish sausage and chop the onion and garlic.
  3. (Optional) Parboil the diced potatoes for 5–6 minutes, then drain and pat dry.
  4. In a large skillet, heat the olive oil over medium heat. Cook the sliced sausage until browned. Remove the sausage and set it aside.
  5. To the same skillet, add the olive oil and butter. Fry the diced potatoes in a single layer until they achieve a golden-brown color.
  6. Stir in the chopped onions and minced garlic. Continue sautéing until the onions become soft and golden.
  7. Return the browned sausage to the pan. Add paprika, salt, and black pepper, stirring to combine thoroughly.
  8. Allow the mixture to cook for a few more minutes until everything is heated through. Garnish with freshly chopped parsley if desired.

Notes

Ensure to cut the potatoes into even sizes for uniform cooking. Experiment with spices to customize your dish.
