- 2 (15 oz) cans corn, drained
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 red bell pepper, diced
- 1/2 red onion, finely diced
- 2 cups Fritos corn chips
Instructions
- Drain the corn thoroughly.
- In a large bowl, combine corn, diced bell pepper, and red onion.
- Mix in mayonnaise and sour cream until well combined.
- Fold in shredded cheddar cheese.
- Refrigerate until ready to serve.
- Just before serving, stir in Fritos corn chips.

- Can be made up to 24 hours ahead – just add Fritos right before serving.
- Most Fritos corn chips are gluten-free, but verify packaging.
- Frozen corn can be substituted – thaw and drain first.
