Delightful fudgy brownie cookies that are rich in chocolate flavor and chewy in texture, perfect for any occasion.


Ingredients

  • 110g unsalted butter, softened
  • 100g light brown sugar
  • 60g granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tablespoons honey or golden syrup
  • 180g plain flour
  • 50g cocoa powder
  • 1/4 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 100g dark chocolate chips
  • 60ml heavy cream
  • Rainbow sprinkles or chocolatey bits for decoration

Instructions

  1. Preheat your oven to 180C (160C fan).
  2. In a bowl, cream together the butter, light brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. Mix in the honey or golden syrup.
  5. In a separate bowl, sift together the plain flour, cocoa powder, bicarbonate of soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture until just combined.
  7. Stir in the dark chocolate chips.
  8. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  9. Bake for 10–11 minutes, they should look underbaked in the middle.
  10. Let cool slightly before decorating with heavy cream and sprinkles or chocolatey bits.

Notes

For best results, use room temperature ingredients. Avoid overmixing the dough to keep the cookies tender.
