- 110g unsalted butter, softened
- 100g light brown sugar
- 60g granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 tablespoons honey or golden syrup
- 180g plain flour
- 50g cocoa powder
- 1/4 tsp bicarbonate of soda
- 1/2 tsp salt
- 100g dark chocolate chips
- 60ml heavy cream
- Rainbow sprinkles or chocolatey bits for decoration
Instructions
- Preheat your oven to 180C (160C fan).
- In a bowl, cream together the butter, light brown sugar, and granulated sugar until smooth.
- Beat in the egg and vanilla extract until well combined.
- Mix in the honey or golden syrup.
- In a separate bowl, sift together the plain flour, cocoa powder, bicarbonate of soda, and salt.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Stir in the dark chocolate chips.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10–11 minutes, they should look underbaked in the middle.
- Let cool slightly before decorating with heavy cream and sprinkles or chocolatey bits.
Notes
For best results, use room temperature ingredients. Avoid overmixing the dough to keep the cookies tender.
