Ingredients

Scale
  • 1 cup all-purpose flour (120 g)
  • 1/2 cup unsweetened cocoa powder (50 g)
  • 1/4 teaspoon (1 ml) baking powder
  • 1/4 teaspoon (1 ml) baking soda
  • 1/4 teaspoon (1 ml) salt
  • 1/2 cup vegetable oil (120 ml)
  • 1 cup granulated sugar (200 g)
  • 1 teaspoon (5 ml) vanilla extract
  • 1 1/2 cups grated zucchini (about 1 medium zucchini) (225 g)
  • 1/2 cup chopped walnuts or pecans (optional) (60 g)
  • 1/2 cup dairy-free chocolate chips (90 g)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×9 inch baking pan and set aside.
  3. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  4. In a large bowl, combine the vegetable oil, granulated sugar, and vanilla extract.
  5. Stir the grated zucchini into the wet ingredients until well combined.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just incorporated.
  7. Fold in the chopped walnuts or pecans, if using.
  8. Stir in the semi-sweet chocolate chips.
  9. Pour the batter into the prepared baking pan, spreading it evenly.
  10. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  11. Let the brownies cool in the pan on a wire rack before cutting into squares.
  12. Serve and enjoy your fudgy zucchini brownies.

Notes

  • Squeeze out excess moisture from grated zucchini before adding to batter for fudgy brownies.
  • Toast walnuts or pecans for extra crunch and flavor in the brownie batter.
  • For a sweeter treat, use milk chocolate chips instead of semi-sweet in the brownie recipe.
