- 1/2 cup (120 ml) milk (120 milliliters)
- 1 cup (240 ml) grated cheddar cheese (115 grams)
- 1 1/2 cups (360 ml) grated zucchini, squeezed dry (about 2 medium zucchinis) (225 grams)
- 1/4 cup (60 ml) chopped fresh parsley (15 grams)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan with butter or nonstick spray.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder, onion powder, and black pepper.
- In another bowl, beat the eggs.
- Add the vegetable oil and milk to the eggs and mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the grated cheddar cheese, grated zucchini, and chopped parsley.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the pan for 10 minutes.
- Transfer the bread to a wire rack to cool completely before slicing.
