  • 1/2 teaspoon (3 ml) onion powder (2.5 grams)
  • 1/4 teaspoon (1 ml) black pepper (1.25 grams)
  • 2 large eggs
  • 1/3 cup (80 ml) vegetable oil (80 milliliters)
  • 1/2 cup (120 ml) milk (120 milliliters)
  • 1 cup (240 ml) grated cheddar cheese (115 grams)
  • 1 1/2 cups (360 ml) grated zucchini, squeezed dry (about 2 medium zucchinis) (225 grams)
  • 1/4 cup (60 ml) chopped fresh parsley (15 grams)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan with butter or nonstick spray.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder, onion powder, and black pepper.
  4. In another bowl, beat the eggs.
  5. Add the vegetable oil and milk to the eggs and mix well.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined.
  7. Fold in the grated cheddar cheese, grated zucchini, and chopped parsley.
  8. Pour the batter into the prepared loaf pan and spread it evenly.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let cool in the pan for 10 minutes.
  11. Transfer the bread to a wire rack to cool completely before slicing.
