- 1 tablespoon olive oil
- 4 tablespoons unsalted butter, divided
- 1 pound Yukon Gold potatoes, diced into 1/2-inch cubes
- 4 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1 1/2 pounds sirloin steak, cut into 1-inch cubes
- Freshly chopped parsley (optional, for garnish)
Instructions
- Dice the Yukon Gold potatoes into 1/2-inch cubes and toss them with 1 tablespoon of olive oil, half the rosemary, half the oregano, and a pinch of salt and pepper. Set aside.
- Dry the sirloin steak cubes thoroughly, then season with the remaining salt and pepper.
- In a large skillet over medium-high heat, melt 2 tablespoons of butter and the olive oil. Sear the steak in a single layer for 2-3 minutes per side until browned. Remove and set aside.
- Reduce the heat to medium, add the remaining 2 tablespoons of butter, and sauté the minced garlic with the remaining herbs for 30-60 seconds until fragrant.
- Return the seared steak bites to the skillet with the garlic butter and let them simmer for 1-2 minutes, allowing flavors to meld.
- Serve immediately, optionally garnished with parsley, alongside the seasoned potatoes.
Notes
To ensure a perfect sear, avoid overcrowding the skillet. Adjust seasonings to fit your taste.
