  • 1 pound baby potatoes, halved
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, melt the butter and sauté the minced garlic until fragrant, about 1 minute.
  3. Season the chicken breasts with salt, pepper, thyme, and paprika.
  4. Place the seasoned chicken in the skillet and sear both sides until golden brown.
  5. Add the halved baby potatoes around the seared chicken in the skillet.
  6. Pour any remaining garlic butter over the chicken and potatoes.
  7. Transfer the skillet to the preheated oven and bake for 25-30 minutes, until the chicken is cooked through and the potatoes are tender.
  8. Garnish with fresh parsley before serving.
