Ingredients

  • 8 oz baby bella mushrooms, sliced
  • 1 cup orzo, uncooked
  • 2 cups chicken broth
  • 5 cloves garlic, minced
  • ½ teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • 5 oz fresh spinach
  • ½ cup heavy cream
  • ¼ teaspoon red pepper flakes

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add sliced mushrooms to the skillet and cook until golden brown, about 5 to 7 minutes.
  3. Remove half the mushrooms and set them aside for later.
  4. Add the orzo, chicken broth, minced garlic, and all seasonings to the skillet.
  5. Simmer for 5 to 10 minutes until the orzo is almost tender, stirring occasionally.
  6. Add the fresh spinach and cook until wilted.
  7. Stir in the heavy cream and reserved mushrooms, heating through on low until everything is warmed.
  8. Serve hot, garnishing with red pepper flakes and optional grated Parmesan cheese.
