- 1 tablespoon olive oil
- 8 oz baby bella mushrooms, sliced
- 1 cup orzo, uncooked
- 2 cups chicken broth
- 5 cloves garlic, minced
- ½ teaspoon Italian seasoning
- ½ teaspoon paprika
- ¼ teaspoon salt
- 5 oz fresh spinach
- ½ cup heavy cream
- ¼ teaspoon red pepper flakes
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add sliced mushrooms to the skillet and cook until golden brown, about 5 to 7 minutes.
- Remove half the mushrooms and set them aside for later.
- Add the orzo, chicken broth, minced garlic, and all seasonings to the skillet.
- Simmer for 5 to 10 minutes until the orzo is almost tender, stirring occasionally.
- Add the fresh spinach and cook until wilted.
- Stir in the heavy cream and reserved mushrooms, heating through on low until everything is warmed.
- Serve hot, garnishing with red pepper flakes and optional grated Parmesan cheese.
