Instructions
- Preheat oven to 425°F (220°C).
- Wash potatoes and dry thoroughly.
- Cut potatoes into even-sized chunks.
- Mix melted butter or oil with minced garlic, herbs, salt, and pepper.
- Toss potatoes with the herb-garlic mixture.
- Arrange potatoes on a baking sheet without overcrowding.
- Roast for 45-50 minutes, flipping halfway through, until golden and crispy.
Notes
- Can be par-roasted for 30 minutes up to 4 hours ahead.
- Dried herbs can be substituted (use 1 teaspoon each).
- Thoroughly dry potatoes after washing for best crispiness.
- Don’t overcrowd the baking sheet.
