Ingredients

  • 1.5 lbs sirloin steak (cubed)
  • 3 tbsp olive oil
  • 4 tbsp butter, divided
  • 4 garlic cloves (minced)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper (to taste)
  • 1/2 tsp red pepper flakes (optional)
  • 12 oz rotini or fusilli pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp Cajun seasoning
  • 1 tbsp butter (for the sauce)
  • Fresh parsley (chopped, for garnish)
  • 1/2 cup sautéed mushrooms
  • 1/2 cup chopped bell peppers
  • 1 cup fresh spinach

Instructions

  1. Cook the pasta in salted water until al dente. Reserve a quarter cup of pasta water before draining and set aside.
  2. In a bowl, season the cubed steak with olive oil, garlic powder, smoked paprika, salt, pepper, and red pepper flakes, if using.
  3. In a skillet over medium-high heat, sear the seasoned steak in batches until browned on all sides. Remove the steak and set aside.
  4. In the same skillet, melt 2 tablespoons of butter. Add the minced garlic, stirring until fragrant.
  5. Return the steak to the skillet, combining it with the butter and garlic. Remove from heat and cover to keep warm.
  6. In the same skillet, melt the remaining butter and add the heavy cream along with the additional garlic powder. Gently simmer for a few minutes.
  7. Stir in the grated Parmesan cheese and Cajun seasoning. Continue stirring until the sauce thickens. Adjust the seasoning as needed.
  8. Combine the pasta with the cream sauce, adding the reserved pasta water to achieve desired consistency.
  9. Fold in the seared steak along with its juices. If using, add sautéed mushrooms, chopped bell peppers, and fresh spinach.
  10. Garnish with chopped parsley before serving.
