- 1 lb sirloin steak, cut into bite-sized pieces (can substitute with ribeye or tenderloin)
- 1 lb baby potatoes, halved or quartered (baby Yukon gold or red potatoes work well)
- 3 tbsp unsalted butter, divided
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp dried thyme (fresh thyme can be used for a stronger flavor)
- 1 tsp dried rosemary (can substitute with fresh rosemary)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Boil the halved baby potatoes in salted water until fork-tender, about 15 minutes. Drain, return them to the pot, and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steak pieces in a single layer and sear until browned on all sides, about 3-4 minutes. Remove the steak and set aside.
- In the same skillet, reduce heat to medium and add 2 tablespoons of butter. Once melted, add the minced garlic, thyme, and rosemary, stirring to combine and letting infuse for about 1 minute.
- Add the cooked baby potatoes to the skillet, tossing to coat with the garlic butter mixture. Sauté for an additional 3-4 minutes until slightly crispy and golden.
- Return the steak to the skillet, adding any remaining juices. Toss everything together for a couple of minutes until the steak is heated through and coated in the garlic butter sauce.
- Sprinkle with freshly chopped parsley before serving.
Notes
Season generously with salt and pepper for enhanced flavor. Allow steak to come to room temperature for even cooking.
