Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Pat the steak bites dry with paper towels and season with salt and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the seasoned steak bites to the hot skillet in a single layer and sear each side for about 1-2 minutes until browned. Remove the steak from the skillet and set aside.
  4. Add the butter to the same skillet and allow it to melt over medium heat, then add the minced garlic and cook for about 30 seconds until fragrant.
  5. Toss the zucchini into the skillet, cooking for 3-5 minutes while stirring until tender-crisp.
  6. Return the steak bites to the skillet and toss everything together to coat with the garlic butter.
  7. Cook for another 1-2 minutes until the steak is heated through.
  8. Garnish with fresh parsley if desired, and serve immediately.

Notes

For best results, use an instant-read thermometer to check for doneness. Cook to 130°F for medium-rare or 145°F for medium.
