A comforting dish featuring tender sirloin steak bites and crispy Yukon Gold potatoes, infused with garlic and aromatic herbs.
Ingredients

- 1 lb. Yukon Gold potatoes, diced into ½-inch cubes
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried oregano
- ½ tsp kosher salt
- ½ tsp ground pepper
- 1 tbsp olive oil
- 1½ lbs. sirloin steak, cut into 1-inch cubes
- 4 tbsp unsalted butter, divided
- Freshly chopped parsley, optional for garnish
Instructions
- Place a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter. Let the butter melt completely.
- Add the diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground pepper. Cook the potatoes for about 4 minutes without stirring, then stir and continue cooking for another 3-4 minutes until fork tender. Remove from the skillet and set aside.
- Increase the heat to high, add the remaining 2 tablespoons of butter, and melt. Add the steak cubes in a single layer and cook for 1 minute without moving, then flip or stir and cook for another 1-2 minutes until desired doneness.
- Add the cooked potatoes back into the skillet with the steak and toss gently to combine. Adjust seasoning if needed.
- Sprinkle with freshly chopped parsley and serve immediately.
Notes
Serve with a side salad or steamed vegetables. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
