Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Pat the steak bites dry with paper towels and season them with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add steak bites to the hot skillet in a single layer. Sear for 1-2 minutes per side until browned and then remove from the skillet.
  4. Add butter to the same skillet. Once melted, add minced garlic and cook for about 30 seconds until fragrant.
  5. Add zucchini to the skillet and cook for 3-5 minutes, stirring occasionally, until tender-crisp.
  6. Return the steak bites to the skillet and toss everything together to coat with the garlic butter.
  7. Cook for another 1-2 minutes until the steak is heated through.
  8. Garnish with fresh parsley if desired and serve immediately.

Notes

For a rustic presentation, serve directly from the skillet. These bites can be paired with mashed potatoes, rice, or a green salad.
