Ingredients

- 4 cups vegetable broth
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery; sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute.
- Add the drained chickpeas and pour in the vegetable broth. Season with cumin, then bring to a boil.
- Reduce the heat to a simmer and cook for 15-20 minutes. Adjust seasoning with salt and pepper.
- If desired, use an immersion blender to puree the soup for a smoother texture.
- Serve hot, garnished with freshly chopped parsley.
