Ingredients

  • 2 carrots, diced
  • 2 celery stalks, diced

  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery; sauté for about 5 minutes until softened.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Add the drained chickpeas and pour in the vegetable broth. Season with cumin, then bring to a boil.
  4. Reduce the heat to a simmer and cook for 15-20 minutes. Adjust seasoning with salt and pepper.
  5. If desired, use an immersion blender to puree the soup for a smoother texture.
  6. Serve hot, garnished with freshly chopped parsley.
