Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté the chopped onion and carrots until they soften, about 5-7 minutes.
- Add the minced garlic and cook for 1 minute until fragrant.
- Stir in cumin and paprika, cooking for another minute.
- Add chickpeas, diced tomatoes, and vegetable broth; bring to a gentle boil.
