Ingredients

- 1 pound fresh red chilies
- 10 cloves garlic
- 3 tablespoons white vinegar
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1 tablespoon sugar
Instructions
- Wash and roughly chop fresh chilies, removing stems
- Peel and mince garlic cloves
- Heat oil in a pan and sauté garlic until fragrant
- Add chopped chilies and cook for 10 minutes
- Add vinegar, salt, and sugar, and simmer for 5 minutes
- Blend mixture until smooth in a food processor
- Store in a clean, sterilized jar in the refrigerator

- Use gloves when handling fresh chilies
- Adjust spiciness by varying the type of chilies used
- Store in an airtight container in the refrigerator for up to 2 weeks
