Ingredients

- 3 heads of garlic
- 2 cups olive oil
- 2–3 sprigs fresh thyme
- 2 bay leaves
- 1/2 tsp black peppercorns
- Pinch of sea salt
Instructions
- Peel garlic cloves carefully, keeping them whole
- Place peeled garlic in a small saucepan and cover completely with olive oil
- Add thyme, bay leaves, and peppercorns to the oil
- Cook on very low heat at 200°F for 45-60 minutes until garlic is soft and golden
- Let cool and transfer to a clean, sterilized jar with the infused oil
