- 4 large russet potatoes
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 1 teaspoon dried parsley

Instructions
- Preheat oven to 425°F (220°C)
- Cut potatoes into even french fry shapes
- Soak cut potatoes in cold water for 30 minutes to remove excess starch
- Dry potatoes completely and toss with olive oil and seasonings
- Spread fries in a single layer on baking sheet
- Bake for 25-30 minutes, flipping halfway through
- Sprinkle with parmesan cheese in the last 5 minutes of baking
