Description
A comforting and flavorful stew featuring tofu, sweet potatoes, and zucchini, infused with garlic and ginger.
Ingredients

- 1 block extra firm tofu or super firm tofu
- 1 tbsp gluten-free soy sauce or coconut aminos
- 2 tsp nutritional yeast
- 1 cup sweet potato, cut into 1/2 inch pieces
- 1 medium zucchini, sliced into thick half moons
- 1 tbsp olive oil, divided
- 1 tsp cumin seeds
- 1 small onion, diced
- 2-inch fresh ginger root, grated
- 4 garlic cloves, minced
- 1/2 tsp ground coriander
- 1/2 tsp turmeric
- 1 tbsp tomato paste
- 1 tbsp garlic chili sauce
- 1/2 cup cooked small lentils or canned
- 1 (13.5 oz) can light coconut milk
- 1/2 bouillon cube or 1/2 tsp Better Than Bouillon Vegetable Paste (optional)
Instructions
- Heat half of the olive oil in a large pot over medium heat. Add the cumin seeds and toast for a minute or until fragrant.
- Add the diced onion, stirring until translucent. Then add grated ginger and minced garlic, cooking until aromatic (about 30 seconds).
- Incorporate turmeric, ground coriander, and cumin; stir well to combine.
- Add tomato paste and garlic chili sauce, cooking for an additional minute.
- Stir in sweet potato and zucchini, coating them in the spice mixture.
- Pour in the coconut milk and add lentils. Stir in tofu cubes, soy sauce or coconut aminos, and nutritional yeast.
- Optionally, melt the bouillon into the stew for depth. Simmer for 15-20 minutes until vegetables are tender.
- Adjust seasoning to taste, adding salt or pepper as needed.
- Serve hot and enjoy!
Notes
For a thicker stew, let it simmer uncovered for longer. Adjust garlic chili sauce for desired spice level.
