Description

A warm and flavorful garlic herb chicken dish served with creamy mashed potatoes and roasted carrots, perfect for family meals.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 2 tbsp fresh thyme, chopped (or 2 tsp dried thyme)
  • 2 tbsp fresh parsley, chopped (plus more for garnish)
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 1/3 cup heavy cream
  • 4 medium Yukon Gold potatoes, peeled and chopped
  • Salt and pepper to taste
  • 4 large carrots, peeled and sliced (or 10 baby carrots)
  • 1 tsp honey (optional)
  • 1/4 cup chicken broth (optional, for pan sauce)

Instructions

  1. In a small bowl, mix olive oil, minced garlic, chopped thyme, salt, and pepper. Coat the chicken breasts in this mixture and let them marinate for at least 30 minutes.
  2. Preheat the oven to 400°F (200°C).
  3. Toss the sliced carrots with olive oil, salt, pepper, and honey (if using). Spread on a baking sheet and roast for 25–30 minutes, turning halfway through.
  4. While the carrots roast, boil the chopped potatoes in salted water until tender, about 15–20 minutes. Drain and mash with butter, warm cream, and pinch of garlic. Season with salt and pepper.
  5. Heat a skillet with olive oil over medium-high heat. Sear the marinated chicken for 3–4 minutes per side until golden brown.
  6. Transfer to the oven or place on a baking tray. Bake for 8–10 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Let the chicken rest for 5 minutes. Optionally, deglaze the skillet with chicken broth and spoon pan juices over the meat.
  8. Serve the chicken over creamy mashed potatoes with roasted carrots, garnished with chopped parsley.

Notes

For deeper flavor, marinate chicken up to 2 hours or overnight. Cut carrots uniformly for even roasting. For extra creamy mashed potatoes, use a ricer to mash.
