Instructions

  1. In a small bowl, mix olive oil, garlic, rosemary, thyme, lemon zest, lemon juice, Dijon mustard, salt, and pepper to create the marinade.
  2. Place lamb chops in a resealable plastic bag or shallow dish and pour marinade over them, ensuring they’re well-coated. Seal or cover and refrigerate for at least 2 hours (minimum 30 minutes if short on time).
  3. Remove lamb from refrigerator 30 minutes before cooking to bring to room temperature.
