Description

Delicious keto-friendly stuffed spaghetti squash filled with chicken, spinach and cheese. Perfect for meal prep and easily adaptable for vegetarians.


Ingredients

  • 2 medium spaghetti squash
  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Cut spaghetti squash in half lengthwise and scoop out seeds.
  2. Brush the inside of each squash half with olive oil and season with salt and pepper. Place cut-side down on a baking sheet.
  3. Bake for 30-40 minutes until the flesh easily pulls into spaghetti-like strands with a fork.
  4. While squash is baking, heat olive oil in a large skillet over medium heat. Add diced chicken and cook until no longer pink, about 5-7 minutes.
  5. Add onion and garlic to the skillet and cook until softened, about 3-4 minutes.
  6. Add spinach and cook until wilted. Season with oregano, basil, salt, and pepper.
  7. When squash is done, use a fork to scrape the flesh into spaghetti-like strands, leaving about 1/4 inch of flesh attached to the skin.
  8. Mix the squash strands with the chicken and spinach mixture. Stir in half of the mozzarella and parmesan cheese.
  9. Fill the squash shells with the mixture and top with remaining cheese.
  10. Return to the oven and bake for 10-15 minutes until cheese is melted and bubbly.

Notes

  • For a vegetarian version, substitute the chicken with mushrooms or additional vegetables.
  • This dish can be made ahead and stored in the refrigerator for up to 3 days.
  • For meal prep, prepare everything but don’t do the final baking until ready to serve.
  • The squash shells make natural serving dishes, perfect for presentation.
