Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and dry the baby potatoes. Toss them in a large bowl with olive oil, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on the prepared baking sheet. Roast for 25–30 minutes, until they turn golden brown and fork-tender.
  4. While the potatoes roast, melt butter in a pan over medium heat. Add the minced garlic and sauté until fragrant.
  5. Once the potatoes are roasted, combine them with the garlic sauce in the pan, tossing gently to coat.
  6. Transfer to a serving platter, garnish with parsley if desired, and serve hot.
