Ingredients

  • 2 heads of garlic
  • 4 cups chicken or vegetable broth
  • 1 medium onion, chopped
  • 2 medium potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C)
  2. Cut top off garlic heads, drizzle with olive oil, wrap in foil and roast for 30-40 minutes
  3. Sauté chopped onions in pot until translucent
  4. Add roasted garlic, potatoes, and broth. Simmer until potatoes are tender
  5. Blend soup until smooth, stir in cream, season with salt and pepper
