Ingredients

- 2 heads of garlic
- 4 cups chicken or vegetable broth
- 1 medium onion, chopped
- 2 medium potatoes, peeled and cubed
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C)
- Cut top off garlic heads, drizzle with olive oil, wrap in foil and roast for 30-40 minutes
- Sauté chopped onions in pot until translucent
- Add roasted garlic, potatoes, and broth. Simmer until potatoes are tender
- Blend soup until smooth, stir in cream, season with salt and pepper
Notes
- You can use vegetable broth instead of chicken broth for a vegetarian version
- Store in an airtight container in the refrigerator for up to 3 days
