German Chocolate Poke Cake

  • 1 cup unsweetened cocoa powder
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 cup sweetened condensed milk
  • 1 cup chocolate frosting

Instructions

  1. Preheat oven to 350°F (175°C) and grease and flour a 9×13-inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
  3. Add milk, vegetable oil, eggs, and vanilla extract. Beat on medium speed for about 2 minutes until smooth.
  4. Stir in boiling water until the batter is smooth.
  5. Pour batter into the prepared pan and bake for 30-35 minutes, until a toothpick comes out clean.
  6. Let the cake cool in the pan for about 10 minutes. Poke holes in the top using the handle of a wooden spoon.
  7. In a small bowl, mix sweetened condensed milk, coconut, and pecans, then pour over the cake to fill the holes.
  8. Allow the cake to cool completely before spreading chocolate frosting on top.

Notes

For extra flavor, consider toasting the pecans before using them and refrigerate the cake for a few hours before serving.
