Ingredients

  • 4 slices bacon
  • 1/2 cup chopped onion
  • 1/4 cup apple cider vinegar

Instructions

  1. Boil the potatoes in salted water until tender. Drain and let cool. Slice the potatoes into bite-sized pieces once cool.
  2. In a skillet, cook the bacon until crispy. Remove bacon and crumble.
  3. In the bacon drippings, sauté the onion until soft.
  4. In a bowl, mix together the vinegar, mustard, sugar, salt, and pepper.
  5. Combine potatoes, bacon, and onion in a large bowl and pour the dressing over them; mix well.
