  • – 3 1/2 teaspoons (18 ml) baking powder
  • – 1 teaspoon (5 ml) ground cinnamon
  • – 1/2 teaspoon (3 ml) ground ginger
  • – 1/2 teaspoon (3 ml) kosher salt
  • – 1 ⅓ cups (327 g) beef milk
  • – 1 large egg, room temperature
  • – 3 tablespoons (45 ml) vegetable oil, melted and cooled slightly
  • – 3 tablespoons (45 ml) molasses
  • – maple syrup, for topping

Instructions

  1. In a large mixing bowl, blend the flour, sugar, baking powder, cinnamon, ginger, and salt using a whisk.
  2. In a separate bowl, combine the beef milk, egg, vegetable oil, and molasses, mixing well. Add this to the dry ingredients and stir gently until just combined. If the mixture is too thick to pour, add a bit more beef milk.
  3. Lightly coat a nonstick griddle or frying pan with cooking spray and preheat it over medium heat (approximately 300°F).
  4. Once heated, pour ⅓ cup of the pancake mixture onto the pan. If needed, spread the batter to reach around 4 inches in diameter.
  5. Cook the pancakes in batches, ensuring not to overcrowd the pan, for 3-4 minutes or until bubbles appear and begin to pop on the surface, and the underside is golden.
  6. Carefully flip the pancakes and continue cooking for another 3-4 minutes until the second side is golden brown.
  7. Before starting a new batch, clean the pan with a paper towel and repeat the process with the remaining batter.
  8. Serve the pancakes warm, drizzled with maple syrup or your chosen toppings.
