  • 1/4 teaspoon ground cloves (0.5 g)
  • 16 to 20 gingerbread cookies, about 8 ounces (227 g)
  • 1/4 cup (30 g) powdered sugar
  • 1 tablespoon cocoa powder (8 g)
  • 1 tablespoon crystallized ginger, finely chopped (15 g)

Instructions

  1. Combine brewed coffee and vanilla extract in a shallow dish. Set aside.
  2. In a large mixing bowl, whip heavy cream until soft peaks form.
  3. Add mascarpone cheese and granulated sugar to the whipped cream.
  4. Beat until smooth and well combined.
  5. Gently fold in ground ginger, cinnamon, nutmeg, and cloves.
  6. Dip gingerbread cookies quickly into the coffee mixture, one at a time.
  7. Arrange a layer of soaked cookies at the bottom of a trifle dish.
  8. Spread a layer of the mascarpone mixture over the cookies.
  9. Repeat layers of dipped cookies and mascarpone mixture, ending with the mascarpone.
  10. In a small bowl, mix powdered sugar and cocoa powder.
  11. Sift cocoa mixture over the top layer of mascarpone.
