- 3 garlic cloves, minced (about 1 tablespoon)
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 ½ teaspoons dried parsley
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- ½ teaspoon salt
- ¼ teaspoon chili powder
- 4 cups beef or chicken broth (gluten-free)
- 1 13.6 oz can coconut milk, whisked
- 8 oz gluten-free rotini pasta (or your favorite pasta)
- 2 tablespoons cornstarch
- ¼ cup cold water
- Parsley for garnishing (dry or fresh)
Instructions
- Brown the ground beef in a 12-inch skillet over medium-high heat. Drain off any excess grease.
- Add the minced garlic, Dijon mustard, and Worcestershire sauce to the beef, mixing well.
- Incorporate dried parsley, paprika, onion powder, black pepper, salt, and chili powder.
- Stir in the beef broth and whisked coconut milk, and bring to a boil.
- Add gluten-free rotini pasta and cook for 5 minutes until soft.
- Reduce heat to medium-low, keeping warm.
- Mix cornstarch and cold water in a separate bowl until dissolved, then stir into the stroganoff for 5-10 minutes until thickened.
- Garnish with parsley and serve.
Notes
Use high-quality ground beef for the best flavor. Experiment with spices and herbs according to your preference.
