Ingredients

  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup cold butter, cubed
  • 3/4 cup milk (or dairy-free alternative)
  • 1 lb chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup onions, chopped
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix gluten-free flour, baking powder, and salt. Cut in the butter until crumbly. Stir in the milk until a dough forms.
  2. In a large pot, bring chicken broth to a boil. Add carrots, celery, and onions. Cook until tender.
  3. Add the shredded chicken and thyme, and season with salt and pepper.
  4. Drop spoonfuls of dumpling dough into the boiling broth. Cover and simmer for 15-20 minutes until the dumplings are cooked through.
  5. Serve hot and enjoy!

Notes

Ensure to use cold butter for light and fluffy dumplings. Taste the broth before serving to adjust seasoning.
