Ingredients

- 2 cups gluten-free flour blend
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup cold butter, cubed
- 3/4 cup milk (or dairy-free alternative)
- 1 lb chicken breast, cooked and shredded
- 4 cups chicken broth
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 cup onions, chopped
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- In a bowl, mix gluten-free flour, baking powder, and salt. Cut in the butter until crumbly. Stir in the milk until a dough forms.
- In a large pot, bring chicken broth to a boil. Add carrots, celery, and onions. Cook until tender.
- Add the shredded chicken and thyme, and season with salt and pepper.
- Drop spoonfuls of dumpling dough into the boiling broth. Cover and simmer for 15-20 minutes until the dumplings are cooked through.
- Serve hot and enjoy!
Notes
Ensure to use cold butter for light and fluffy dumplings. Taste the broth before serving to adjust seasoning.
