Instructions

  1. In a medium bowl, whisk together the gluten-free flour blend, baking soda, and salt.
  2. In a large bowl, cream together the butter (or coconut oil), granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips.
  6. Cover and refrigerate the dough for at least 30 minutes (this prevents spreading).
  7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
