Instructions
- In a medium bowl, whisk together the gluten-free flour blend, baking soda, and salt.
- In a large bowl, cream together the butter (or coconut oil), granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Cover and refrigerate the dough for at least 30 minutes (this prevents spreading).
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes until edges are golden but centers are still soft.
