  • 1 lb ground beef
  • 1 lb ground Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 24 oz marinara sauce
  • 14 oz canned diced tomatoes
  • 4 cups low-sodium chicken broth
  • 1 tbsp Italian seasoning
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes, optional
  • 3 cups fresh spinach

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onions are translucent.
  2. Add ground beef and Italian sausage, cooking until browned. Drain any excess fat.
  3. Stir in marinara sauce, diced tomatoes, chicken broth, Italian seasoning, salt, pepper, and red pepper flakes (if using).
  4. Bring the mixture to a rolling boil, then add the gluten-free lasagna noodles.
  5. Reduce heat and let it simmer for about 15 minutes, stirring occasionally to prevent clumping.
  6. Just before serving, fold in fresh spinach to let it wilt.

Notes

Adjust seasonings and add vegetables like bell peppers or zucchini for additional texture. Use low-sodium chicken broth for a lighter flavor.
