- 8 oz gluten-free lasagna noodles
- 1 lb ground beef
- 1 lb ground Italian sausage
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 24 oz marinara sauce
- 14 oz canned diced tomatoes
- 4 cups low-sodium chicken broth
- 1 tbsp Italian seasoning
- Salt, to taste
- Black pepper, to taste
- Red pepper flakes, optional
- 3 cups fresh spinach
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onions are translucent.
- Add ground beef and Italian sausage, cooking until browned. Drain any excess fat.
- Stir in marinara sauce, diced tomatoes, chicken broth, Italian seasoning, salt, pepper, and red pepper flakes (if using).
- Bring the mixture to a rolling boil, then add the gluten-free lasagna noodles.
- Reduce heat and let it simmer for about 15 minutes, stirring occasionally to prevent clumping.
- Just before serving, fold in fresh spinach to let it wilt.
Notes
Adjust seasonings and add vegetables like bell peppers or zucchini for additional texture. Use low-sodium chicken broth for a lighter flavor.
