A comforting, gluten-free version of classic lasagna soup with rich flavors and hearty ingredients.

- 1 tbsp olive oil
- 1/2 pound ground beef
- 1 small onion (chopped)
- 4 cloves garlic (minced)
- 1 jar (24 oz) marinara sauce
- 1 can (14.5 oz) diced tomatoes (liquid included)
- 4 cups low sodium chicken broth
- 1 tbsp Italian seasoning
- 1/4 tsp sea salt (adjust to taste)
- 1/4 tsp ground black pepper
- 1/4 tsp red pepper flakes (optional)
- 2 cups spinach (optional)
- 1 box (10 oz) gluten-free lasagna noodles (broken in half)
Instructions
- Pour the olive oil into your large stock pot or Dutch oven, and heat it over medium heat.
- Sauté the chopped onion and minced garlic until they become fragrant and the onion turns translucent.
- Add the ground beef and cook until it browns thoroughly. Drain any excess fat.
- Next, incorporate the marinara sauce, diced tomatoes (including the liquid), and chicken broth into the pot.
- Season with Italian seasoning, red pepper flakes (if you like it spicy), sea salt, and black pepper. Stir well and bring to a boil.
- Add the broken gluten-free lasagna noodles and lower the heat, allowing the soup to simmer for about 15 minutes.
- Just before serving, add fresh spinach and let it wilt for another minute.
- Taste your soup and adjust the seasonings as needed. Enjoy!
Notes
Serve with a dollop of ricotta or cottage cheese, if desired. Garnish with fresh basil or a sprinkle of Italian seasoning.
