  • 3/4 cup (180 ml) vegetable oil
  • 3 cup (720 ml) s all-purpose flour properly measured
  • 2 teaspoon (10 ml) s baking soda
  • 1 teaspoon (5 ml) ground cinnamon
  • 1 1/2 cup (360 ml) s mini semisweet chocolate chips

Instructions

  1. Set your oven to 350°F and prepare two 8×4-inch loaf pans by coating them with a flour-based nonstick spray. Put aside.
  2. Place the shredded zucchini in a colander over the sink and let it sit while you proceed. Avoid squeezing the zucchini.
  3. In a large mixing bowl, combine the sugar, eggs, vanilla extract, salt, and vegetable oil by whisking them together.
  4. Incorporate the flour, baking soda, and cinnamon, mixing gently until the batter is just blended. It will be quite dense at this stage.
  5. Gently fold in the grated zucchini until it is just mixed in.
  6. Add the mini semisweet chocolate chips and stir until they are evenly distributed.
  7. Pour the batter equally into the loaf pans that you prepared earlier.
  8. Place in the oven and bake for 40 to 60 minutes, or until a toothpick inserted in the middle comes out clean.
  9. Allow the loaves to rest in the pans for 10 minutes.
  10. Use a thin knife to loosen the edges, then transfer the zucchini bread to wire racks to cool completely.
