- 2 cup (480 ml) s rolled oats (also called old fashioned oats) certified gluten-free, if necessary
- 1/2 cup (120 ml) pumpkin puree (NOT pumpkin pie filling)
- 1/4 cup (60 ml) natural peanut butter (or your favorite nut butter)
- 1/4 cup (60 ml) pure maple syrup (plus more, to taste)
- 1 teaspoon (5 ml) vanilla extract
- 1 Tablespoon (15 ml) pumpkin pie spice
- Pinch of salt
- 1/2 cup (120 ml) vegan mini chocolate chips
Instructions
- ■ Combine the rolled oats, pumpkin puree, nut butter, maple syrup, vanilla, pumpkin pie spice, and a dash of salt in a food processor.
- ■ Blend the mixture until it is well-mixed, occasionally scraping the sides with a spatula. The texture should resemble cookie dough with visible oat bits. Taste and add more maple syrup if you want it sweeter.
- ■ Move the mixture to a large bowl and gently incorporate the mini chocolate chips.
- ■ Take a small portion and roll it between your palms to create a sphere. Use a small cookie scoop if you prefer. Arrange the spheres on a baking sheet lined with parchment paper and continue until all the mixture is used. You should end up with around 20 spheres, depending on their size.
- ■ They can be enjoyed immediately or left to chill in the refrigerator to firm up. Once set, place them in an airtight container and keep them in the fridge or freezer for storage.
