- 2 cups crushed Ritz crackers
- 1/2 cup all-purpose flour (or corn starch for gluten-free)
- 2 eggs, beaten
- 1 cup marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Set up a breading station: Place flour in one shallow dish, beaten eggs in another, and crushed Ritz crackers mixed with Italian seasoning and garlic powder in a third.
- Season chicken breasts with salt and pepper, then dredge each piece in flour, dip in beaten eggs, and coat with Ritz cracker mixture.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and cook until golden brown on both sides, about 2-3 minutes per side.
- Pour marinara sauce over the chicken, sprinkle with mozzarella and Parmesan cheese.
- Transfer skillet to the preheated oven and bake until chicken is fully cooked (internal temperature of 165°F/74°C), about 20-25 minutes.
- Let rest for 5 minutes before serving.
