- Vegetable oil for frying
Instructions
- Grate zucchini and drain excess moisture using a clean kitchen towel.
- Mix grated zucchini with eggs, flour, and grated cheese.
- Season with salt, pepper, and fresh herbs.
- Heat oil in a large skillet over medium heat.
- Drop spoonfuls of mixture into hot oil and fry until golden brown on both sides.
- Drain on paper towels and serve hot.
Notes
- Regular green zucchini can be substituted for golden zucchini.
- Feta, halloumi, or fresh mozzarella can replace Suluguni cheese.
- For gluten-free version, use 1:1 gluten-free flour blend.
- Make vegan by using flax eggs and plant-based cheese.
- Can be made ahead and reheated at 350°F for 7-10 minutes.
