Description

A classic dish that combines tender beef filet, earthy mushroom duxelles, and a flaky pastry crust, perfect for special occasions.

Ingredients

Scale
  • 1 (8 oz) center-cut beef filet
  • 1 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 cup mushrooms, finely chopped (preferably cremini or button)
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 3 slices prosciutto
  • 1 sheet puff pastry
  • 1 egg yolk (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Sear the seasoned filet in a hot pan with olive oil for 1–2 minutes per side to create a golden crust.
  2. Rest the filet and brush with Dijon mustard while it is still warm, allowing the flavors to meld.
  3. Finely chop the mushrooms and sauté with minced garlic and fresh thyme in butter until the mixture is dry, then cool completely.
  4. Layer the slices of prosciutto on a sheet of plastic wrap, followed by the mushroom mixture, then place the beef filet on top and roll tightly using the wrap. Chill for 15 minutes to set.
  5. Roll out the puff pastry, remove the plastic wrap, and wrap the beef completely, sealing the edges with egg wash.
  6. Brush the top with egg yolk to ensure a beautiful golden finish when baked.
  7. Bake the Wellington at 400°F for 15–20 minutes. Allow it to rest for 5 minutes before slicing into inviting, buttery layers.

Notes

Serve with roasted vegetables or creamy mashed potatoes. For added richness, consider a layer of pâté or a different type of cured meat.
