- 1 (8 oz) center-cut beef filet
- 1 tbsp olive oil
- 2 tbsp Dijon mustard
- 1 cup mushrooms, finely chopped (preferably cremini or button)
- 1 tbsp butter
- 2 cloves garlic, minced
- 1 tbsp fresh thyme leaves
- 3 slices prosciutto
- 1 sheet puff pastry
- 1 egg yolk (for egg wash)
- Salt and pepper to taste
Instructions
- Sear the seasoned filet in a hot pan with olive oil for 1–2 minutes per side to create a golden crust.
- Rest the filet and brush with Dijon mustard while it is still warm, allowing the flavors to meld.
- Finely chop the mushrooms and sauté with minced garlic and fresh thyme in butter until the mixture is dry, then cool completely.
- Layer the slices of prosciutto on a sheet of plastic wrap, followed by the mushroom mixture, then place the beef filet on top and roll tightly using the wrap. Chill for 15 minutes to set.
- Roll out the puff pastry, remove the plastic wrap, and wrap the beef completely, sealing the edges with egg wash.
- Brush the top with egg yolk to ensure a beautiful golden finish when baked.
- Bake the Wellington at 400°F for 15–20 minutes. Allow it to rest for 5 minutes before slicing into inviting, buttery layers.
Notes
Serve with roasted vegetables or creamy mashed potatoes. For added richness, consider a layer of pâté or a different type of cured meat.
