Ingredients

- 500g potatoes
- 200g carrots
- 100g celery
- 1 onion
- 1 liter vegetable broth
- 200g sausages
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Peel and dice the potatoes, carrots, and celery. Finely chop the onion.
- In a large pot, sauté the onion until translucent.
- Add the potatoes, carrots, and celery, stirring for a few minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer until the vegetables are tender, about 20 minutes.
- Add the sliced sausages to the pot and cook for an additional 5 minutes.
- Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
To add creaminess, mash a portion of the potatoes as they cook. This soup freezes well, making it perfect for meals anytime.
