Ingredients

Instructions

  1. Peel and dice the potatoes, carrots, and celery. Finely chop the onion.
  2. In a large pot, sauté the onion until translucent.
  3. Add the potatoes, carrots, and celery, stirring for a few minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer until the vegetables are tender, about 20 minutes.
  6. Add the sliced sausages to the pot and cook for an additional 5 minutes.
  7. Season with salt and pepper.
  8. Serve hot, garnished with fresh parsley.

Notes
