Ingredients

- 1 container (5.3 ounces) of plain Greek yogurt
- 2 tablespoons extra virgin olive oil
- 6 cloves fresh garlic, minced
- ½ tablespoon dried oregano
- Juice and zest of 1 lemon
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ cup fresh chopped parsley
- 4 pounds boneless and skinless chicken thighs and drumsticks
Instructions
- Combine the Greek yogurt, minced garlic, dried oregano, lemon juice, salt, black pepper, and chopped parsley in a large bowl.
- Add zest from half the lemon to the marinade.
- Transfer the chicken to a large plastic bag or a glass dish and pour in the marinade, ensuring all pieces are well-coated.
- Refrigerate the marinated chicken for at least 360 minutes, preferably overnight.
- Preheat the grill to around 400°F.
- Grill the chicken for 3 to 5 minutes on each side until its internal temperature reaches 165°F.
- Sprinkle with freshly grated lemon zest before serving.
Notes
For optimal flavor, marinate overnight. Consider using flavored olive oils and adjusting spices for personal taste.
