Ingredients

  • 1 container (5.3 ounces) of plain Greek yogurt
  • 2 tablespoons extra virgin olive oil
  • 6 cloves fresh garlic, minced
  • ½ tablespoon dried oregano
  • Juice and zest of 1 lemon
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ cup fresh chopped parsley
  • 4 pounds boneless and skinless chicken thighs and drumsticks

Instructions

  1. Combine the Greek yogurt, minced garlic, dried oregano, lemon juice, salt, black pepper, and chopped parsley in a large bowl.
  2. Add zest from half the lemon to the marinade.
  3. Transfer the chicken to a large plastic bag or a glass dish and pour in the marinade, ensuring all pieces are well-coated.
  4. Refrigerate the marinated chicken for at least 360 minutes, preferably overnight.
  5. Preheat the grill to around 400°F.
  6. Grill the chicken for 3 to 5 minutes on each side until its internal temperature reaches 165°F.
  7. Sprinkle with freshly grated lemon zest before serving.

Notes

For optimal flavor, marinate overnight. Consider using flavored olive oils and adjusting spices for personal taste.
