- ¼ cup extra virgin olive oil
- 3 garlic cloves (finely minced, or 1 tsp dried garlic powder)
- 1 tsp dried oregano
- ½ tsp smoked paprika
- ½ tsp + a pinch of sea salt
- ¼ tsp coarse black pepper
- 1 pound of thin-sliced chicken breast
- ¼ cup feta cheese
- ¼ cup fresh chopped parsley
- Additional wedges of lemon for serving
Instructions
- Make marinade: Combine the lemon juice, zest, olive oil, minced garlic, oregano, smoked paprika, sea salt, and black pepper in a bowl. Whisk together until fully incorporated. Place the chicken in a sealing bag or dish and pour the marinade over it. Seal or cover and refrigerate for at least 30 minutes, allowing the flavors to develop.
- Cook chicken: Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and discard any excess marinade. Cook the chicken for about 5-7 minutes on each side or until fully cooked, with internal temperatures reaching 165°F.
- To finish: Once cooked, transfer the chicken to a platter. Sprinkle with crumbled feta cheese and fresh chopped parsley. Serve with additional lemon wedges on the side for a fresh burst of citrus flavor.
Notes
Let the chicken rest for at least five minutes after cooking to retain juices. For a zesty kick, grill on lemon slices.
