  • ½ tsp smoked paprika
  • ½ tsp + a pinch of sea salt
  • ¼ tsp coarse black pepper
  • 1 pound of thin-sliced chicken breast
  • ¼ cup feta cheese
  • ¼ cup fresh chopped parsley
  • Additional wedges of lemon for serving

Instructions

  1. Make marinade: Combine the lemon juice, zest, olive oil, minced garlic, oregano, smoked paprika, sea salt, and black pepper in a bowl. Whisk together until fully incorporated. Place the chicken in a sealing bag or dish and pour the marinade over it. Seal or cover and refrigerate for at least 30 minutes, allowing the flavors to develop.
  2. Cook chicken: Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and discard any excess marinade. Cook the chicken for about 5-7 minutes on each side or until fully cooked, with internal temperatures reaching 165°F.
  3. To finish: Once cooked, transfer the chicken to a platter. Sprinkle with crumbled feta cheese and fresh chopped parsley. Serve with additional lemon wedges on the side for a fresh burst of citrus flavor.

Notes

Let the chicken rest for at least five minutes after cooking to retain juices. For a zesty kick, grill on lemon slices.
