  • 1/4 tsp (1 ml). salt
  • 2 large eggs
  • 1 cup plain Greek yogurt (5% preferred) 224g
  • 1/2 cup (120 ml) unsweetened Vanilla almond milk or any milk preferred
  • 1/4 cup (60 ml) creamy peanut butter or nut butter
  • 1 tsp (5 ml). vanilla extract
  • 1/2 cup (120 ml) chocolate chips

Instructions

  1. Start by setting your oven to 350°F and line a muffin tray with paper cups.
  2. In one mixing bowl, combine the flour, cocoa, sugar, baking powder, baking soda, and salt by whisking them together.
  3. In a separate bowl, whisk the eggs, then incorporate the Greek yogurt, almond milk, peanut butter, and vanilla extract.
  4. Gently blend the liquid mixture with the dry ingredients, ensuring not to overmix, and then carefully fold in the chocolate chips.
  5. Pour the batter into the muffin liners, filling each about 3/4 full. Bake for 13-15 minutes, checking with a toothpick to ensure they are done.
