- 2 large eggs
- 1 cup plain Greek yogurt (5% preferred) 224g
- 1/2 cup (120 ml) unsweetened Vanilla almond milk or any milk preferred
- 1/4 cup (60 ml) creamy peanut butter or nut butter
- 1 tsp (5 ml). vanilla extract
- 1/2 cup (120 ml) chocolate chips
Instructions
- Start by setting your oven to 350°F and line a muffin tray with paper cups.
- In one mixing bowl, combine the flour, cocoa, sugar, baking powder, baking soda, and salt by whisking them together.
- In a separate bowl, whisk the eggs, then incorporate the Greek yogurt, almond milk, peanut butter, and vanilla extract.
- Gently blend the liquid mixture with the dry ingredients, ensuring not to overmix, and then carefully fold in the chocolate chips.
- Pour the batter into the muffin liners, filling each about 3/4 full. Bake for 13-15 minutes, checking with a toothpick to ensure they are done.
- Allow the muffins to cool prior to serving.
- If desired, add extra chocolate chips on top before baking, or swirl more peanut butter on top either before or after baking, and sprinkle with flakey sea salt for garnish.
