  • 1 tsp (5 ml). baking powder
  • 1/2 tsp (3 ml). baking soda
  • 1/4 tsp (1 ml). salt
  • 2 large eggs
  • 1 cup (240 ml) plain Greek yogurt (5% preferred) 224g
  • 1/2 cup (120 ml) unsweetened Vanilla almond milk or any milk preferred
  • 1/4 cup (60 ml) creamy peanut butter or nut butter
  • 1 tsp (5 ml). vanilla extract
  • 1/2 cup (120 ml) chocolate chips

Instructions

  1. Set your oven to 350 degrees Fahrenheit and line a muffin tray with paper cups.
  2. In one bowl, combine the flour, cocoa, sugar, baking powder, baking soda, and salt using a whisk.
  3. In a separate bowl, whisk the eggs, then incorporate the Greek yogurt, almond milk, peanut butter, and vanilla extract.
  4. Gently mix the contents of both bowls together until just combined, then fold in the chocolate chips.
  5. Spoon the mixture into the 12 muffin cups, filling each to about three-quarters full.
  6. Place in the oven and bake for 13 to 15 minutes, or until a toothpick inserted into a muffin comes out clean.
  7. Allow the muffins to cool down before enjoying.
  8. For an extra touch, you can add more chocolate chips on top before baking, or swirl extra peanut butter on top before serving, possibly adding a sprinkle of flaky sea salt.
