- 1/2 tsp (3 ml). baking soda
- 1/4 tsp (1 ml). salt
- 2 large eggs
- 1 cup (240 ml) plain Greek yogurt (5% preferred) 224g
- 1/2 cup (120 ml) unsweetened Vanilla almond milk or any milk preferred
- 1/4 cup (60 ml) creamy peanut butter or nut butter
- 1 tsp (5 ml). vanilla extract
- 1/2 cup (120 ml) chocolate chips
Instructions
- Set your oven to 350 degrees Fahrenheit and line a muffin tray with paper cups.
- In one bowl, combine the flour, cocoa, sugar, baking powder, baking soda, and salt using a whisk.
- In a separate bowl, whisk the eggs, then incorporate the Greek yogurt, almond milk, peanut butter, and vanilla extract.
- Gently mix the contents of both bowls together until just combined, then fold in the chocolate chips.
- Spoon the mixture into the 12 muffin cups, filling each to about three-quarters full.
- Place in the oven and bake for 13 to 15 minutes, or until a toothpick inserted into a muffin comes out clean.
- Allow the muffins to cool down before enjoying.
- For an extra touch, you can add more chocolate chips on top before baking, or swirl extra peanut butter on top before serving, possibly adding a sprinkle of flaky sea salt.
