A refreshing and vibrant salad featuring shredded green papaya, herbs, and a tangy dressing, perfect for any meal.
Ingredients

- 2 cups of shredded green papaya
- ½ cup of shredded carrots (optional)
- ¼ cup of fresh cilantro, chopped
- ¼ cup of Thai basil or mint, chopped
- 2 scallions, sliced
- 2 tablespoons of roasted peanuts, chopped
- 1 small red chili, thinly sliced (or to taste)
- 2 tablespoons of fresh lime juice
- 1 tablespoon of fish sauce (or soy sauce for a vegan version)
- 1 teaspoon of maple syrup or palm sugar
- 1 garlic clove, finely minced
- ½ teaspoon of rice vinegar (optional)
- 1 teaspoon of grated ginger (optional)
Instructions
- Peel the green papaya and remove seeds. Shred using a mandolin or grater into thin strips. Place in a bowl of cold water while preparing the rest.
- In a small bowl, whisk together lime juice, fish sauce, maple syrup, garlic, and vinegar (if using). Adjust seasoning to taste.
- Drain and pat dry the papaya.
- In a large bowl, combine papaya, carrots, herbs, scallions, and chili.
- Pour the dressing over and toss well to combine.
- Plate the salad and sprinkle with roasted peanuts. Serve immediately or chill for 10 minutes before serving.
Notes
Serve the salad fresh for the best texture. Dress just before serving to prevent it from becoming soggy.
