Ingredients

- 2 chicken breasts
- 1 cup quinoa
- 1 avocado
- 1 cup mixed salad greens
- 1/2 cup cherry tomatoes
- 1/4 cup red onion
- 2 tbsp olive oil
- 1 lime
- Salt and pepper to taste
- 2 tbsp honey
- 1 tbsp dijon mustard
Instructions
- Cook quinoa according to package instructions
- Season chicken with salt and pepper, grill until internal temperature reaches 165°F
- Chop vegetables and prepare dressing by mixing honey, mustard, and lime juice
- Assemble bowl with quinoa, sliced chicken, vegetables, and drizzle with dressing
